A cheese culture that defines Dutch, edam cheese is a Mellow, ajedrea, slightly Salty that has a yellow interior with a red or yellow coating of paraffin. (yellow is more common in Holland; red is designed for export). It is made of part-skimmed milk (30 to 40% milk-fat) and comes in spheres with flattened ends. The most exported edam cheese, called for Dutch Town, is the second only for Gouda as Holland. It is a great All-Purpose cheese, especially good when served with dark beer.
